You just have to experience it. Just because it's so different. Pay for an organized three-day trip, for example. Guides will show you the highlights of the outback, especially the famous Mount Uluru, Kata-Tjuta and Kings Canyon. In the evening, you'll stay at a campsite, cook a specialty over a campfire, and then literally make your bed under a tent. When all the lights go out, you'll see millions of stars shining above you and hear the voice of the desert. Mostly a wild dingo dog or a kangaroo running across your face (just kidding, but it can happen).

As for the outback, it's not just central Australia that's worth seeing. The Kimberley, Kalgoorlie, or the completely underground town of Coober Pedy are other places that will give you a glimpse into the history and culture of the Aboriginal tribes and the gold rush era.
